Maybe I'm being far too understanding, and far too willing to grant the benefit of the doubt, but it seems to me that it's not THAT hard to believe that releasing all the documents, properly redacted, and in an easily searchable format, might just possibly require more than 30 days to accomplish? The Epstein Files Transparency Act (EFTA), now signed into law by Trump, is extremely encompassing in all that it required to be done, despite it's brevity.
Even having to "unrelease" some documents that conceivably should NOT have been released in the first place can be explained by simple human error, no?
That said, given this corrupt administration's penchant for flouting the law and doing things half-assed, I supposed it's also quite possible that they are just up to their old tried and true playbook of tricks.
