I watched the video blurb but missed where Hubert Keller said one word about the "dangers posed by coffee" - CO

Doesn't have too! It is already greenie dogma that CO2 is bad, so just pointing out the CO2 inherent in coffee production sends a well understood message, especially well understood by the CDS afflicted.
