The difference between the current situation and the Egypt-Israeli peace is structural.
The difference is that, after their withdrawal from the Sinai after the 73 war, Israel was not occupying a lot of Egyptian land. The West Bank was not part of Transjordan prior to partition, so Jordan probably does not have much affinity for the West Bank. So, those countries could make peace, because they didn't really lose anything. The non-Jewish residents of Palestine have lost their land, or are living under siege. That makes the problem much more difficult.
