IF Harris assumes the office now, serves 7 months as POTUS, would that prevent her from serving 2 full terms in addition to the 7 months?

My recollection is that it needs to be at least two years to count as a term. So the answer would be No.

This last came up with LBJ, having served a bit over a year after the JFK assassination, then a full term after that. He could have run for another term, but famously chose not to.
