Rubic pointed me to a Facebook group for Portugal, which is a fabulous resource with lots of detailed guides etc. Does anyone know of an equivalent for Spain? I'm down to deciding between the two. My impression is that the visa application process may be slightly less complex in Spain. They don't seem to have the Portugese requirement to rent or buy a home many months before visa approval.
