We’ve burned farmers (twice now) and when a farm goes away, so does the food.

Not all farmers got burned. SMALLER farmers got chopped, but their land was sold to other farmers. A large corporate farm could add the productive land no problem. If the land was near a larger city, the farm would become another bedroom development for developers targeting people wanting to NOT live in the city--but willing to commute 30-60 minutes to/from work each AM and PM.
