I'll offer a simple recipe for old-fashioned buttermilk pancakes we make every Sunday.
1 cup flour
1 teaspoon sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1/4 cup whole milk
1 egg, loosely beaten
2 teaspoons butter, melted and cooled slightly
Mix together the dry ingredients (sift if you like but not necessary). Mix together the wet ingredients and add to the dry. Combine (but not to the point that every last lump is gone). Add fresh blueberries, if desired (who doesn't like fresh blueberries).
For ease and simplicity, I usually just mix together the dry ingredients and add the wet ingredients one by one with the melted butter last. Works fine and fewer dirty dishes. Enough for three adults. Recipes doubles without any issues. Serve with a pad of butter on each pancake and real maple syrup. Oh, we'll often replace the flour with Measure for Measure (my wife prefers this gluten-free alternative but it does give the pancakes a very slightly gritty quality, so be forewarned). Yum.
