My question is really basic.

Is there a difference between light and dark in the final product? I know the dark has more molasses. Does that affect your cookies, or banana bread, or other bakes?

Or perhaps it only matters for certain recipes?

IMO the difference between dark and light brown sugar should only be important where a more delicate taste or light color is important to you. Light brown sugar may be slightly sweeter, given less molasses. I doubt most people would be able to tell the difference.
