Subject: Old Fashion Pancakes
I've been making pancakes this way for about twenty plus years now. In my opinion, they are hands down the best and I have yet to find one better at any restaurant. Occasionally, I like to add fresh blueberries to the pancake immediately after pouring the batter on the griddle.
Old-Fashioned Pancakes
Ingredients (About 10 pancakes)
' 1 1/2 cups all-purpose flour
' 3 teaspoons baking powder
' 1/2 teaspoon salt
' 1 tablespoon white sugar
' 3 tablespoons butter, melted
' 1 egg
' 1 1/4 cups milk
' 1/2 teaspoon vanilla extract
X2 Old-Fashioned Pancakes (About 20 pancakes)
' 3 cups all-purpose flour
' 6 teaspoons baking powder
' 1 teaspoon salt
' 2 tablespoons white sugar
' 6 tablespoons butter, melted
' 2 eggs
' 2 1/2 cups milk
' 1 teaspoon vanilla extract
Directions
1. Sift together flour, baking powder, salt, and sugar in a large bowl.
2. Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.
3. Preheat griddle over medium-high heat and then apply butter.
4. Pour batter into the hot skillet, about 1/4 cup of batter for each pancake.
5. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.
