Subject: Banana Pancake
Today I was cleaning out some paper clutter around my desk and came across this recipe I had handwritten out and decided to make it. Not sure what to label it as, so I'm just gonna go with Banana Pancake.

2 eggs
2 tablespoons of rolled oats
1 smidgen of vanilla abstract (I use real)
½ banana sliced and then quartered into small pieces
Mix together with whisk

Take the other half of the banana and slice into ¼ inch slivers and place them down on a small to medium size skillet.
Preheat burner on the lower side of medium
Pour the mix above into the skillet and distribute evenly over the sliced bananas, place a lid on top and allow to cook for approx. 6 minutes
Flip and allow to continue cooking for another 4 minutes without the lid.
Place on plate, scribble a little bit of honey on top along with a dash of ground cinnamon.

Tasty with the consistency of a pancake. I did add ¼ cup of blueberries after I poured contents into skillet.
Simple to make and healthy to boot. This recipe is a keeper, I will definitely prepare this again in the future.
