Subject: lavash pizza
So we ended up with lavash bread. Basically, it was given to us. Rectangular sheets, very thin. What to do?
Pizza.
We had a jar of pizza sauce ("clean"...I don't get stuff with HFCS or chemicals I don't know what they are), we have mozzarella, we have mushrooms, and we have pepperoni.
I spooned a modest amount of pizza sauce (too much would make it soggy), sauteed the shrooms in EVOO, sprinkled freshly shredded mozzarella, distributed the pepperoni, added the cooked mushrooms, and put it on a pizza stone that had been preheated to 400F. I used convection. Turned it after about 5 minutes, pulled it after another 5 or so minutes. It was crispy, cheese was melted and slightly browning.
Thin crust pizza, moderately crispy in the middle, good flavors. Very easy. And we used the lavash. :-)
Lavash is an Armenian bread, and is traditionally consumed with hummus, or some sauces, often with meat wrapped in it. We didn't really have any of that, but we're keeping it in mind for the future.
Tonight we're probably going to use more of the green chile tortillas (also given to us). We already did some "street tacos" earlier this week using those, and they were good. 1poorlady did most of the prep, so I can't quote a recipe or procedure. But green chile tortillas are very nice.
